Overnight Marshmallow Fruit Salad

  Fairly quick to make, and very tasty! An easy version of the classic overnight salad, but without having to cook a custard base.

This delicious fruity salad will be the perfect addition to any meal!


15 1/2 oz. (2 cups) pineapple chunks, drained (reserve liquid)

1 3/4 cups liquid (reserved liquid plus water)

3 oz. package of lemon flavored gelatin

1 cup whipped cream

4 cups miniature marshmallows

1 1/4 cups halved grapes

11 oz. can (1 1/4 cups) mandarin oranges, drained


Heat 1 cup liquid to boiling.

In large bowl, add boiling liquid to gelatin; stir to dissolve. Add remaining liquid, chill until thickened but not set. Fold in whipped cream. Add remaining ingredients; blend well. Cover and refrigerate several hours or overnight.
