Ingredients


  • 1 large egg
  • 2 Tbs granulated sugar
  • 3/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup + 2 Tbs all-purpose flour
  • 3/4 tsp baking powder
  • Pinch of sea salt
  • 2 large bananas
  • Oil for frying
  • Powdered sugar for dusting
  • Caramel sauce for dipping optional

Instructions


  • Place the egg and sugar in a medium-sized bowl,
  • Whisk to combine.
  • Add the milk and vanilla to the same bowl and whisk until incorporated. Set aside.
  • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Pour the wet mixture into the dry and whisk or stir to combine until it just comes together and there are no dry patches, set aside.
  • In a large skillet with deep sides, add 1-2 inches of oil, I used peanut oil. Heat to 350°F.
  • Peel, then cut the bananas into 1-inch sections, place the banana pieces into the batter. Coat the pieces well in the batter.
  • Once the oil is hot, carefully place the banana pieces one by one, not touching and not crowding the pan into the oil. You will need to fry in batches.
  • Turn the bananas over with a slotted spoon until golden on all sides, about 3-5 minutes. You will need to flip them every minute or so so they don’t burn on the bottom. Take the bananas out with a slotted spoon and place them on a paper towel-lined plate to blot off any excess oil.
  • Place them on a wire rack over a sheet tray while you fry the remaining bananas.
  • Serve immediately with a generous dusting of powdered sugar and optional caramel sauce on the side for dipping.

Notes

  1. If you are not a fan of whole milk, any milk will work.
  2. You can easily double this recipe to serve more people.
  3. Use your favorite dippings sauce, try them all to find what you like best.
  4. I highly recommend the powdered sugar.
  5. If you want a real potent banana flavor you can substitute some of the vanilla extract with banana extract.
