2 cups flour

2 cups sugar

2 eggs

1 teaspoon vanilla

1 medium can crushed pineapple, undrained

1 teaspoon baking soda

1/2 teaspoon salt

Preheat oven to 350. Blend all ingredients and pour into prepared 13×9 pan and bake for 40 minutes.


1 stick butter

1/2 cup white sugar

2/3 cup evaporated milk

1/2 cup brown sugar

Combine in medium saucepan and cook for 5 minutes DO NOT BOIL.

Remove from heat and stir in:

1 cup coconut

1 cup pecans, chopped

Pour mixture over hot cake. After cooled, keep cake refrigerated.
